SS is actually stainless steel. SS will last much longer than galvanized, but actual lifetime depends greatly upon your local climate, your fuel, and how often the system is used.
It will really depend upon the brand of piping that you are using. Pipe brands are not interchangeable - there are differences between types of connection joints.
You can just start your pipe run with this double wall stove top adapter with damper, item 8679. The 8679 will connect to your flue and then the telescoping double wall pipe will connect to it as well.
