Triple wall and Double wall only differ in the amount of clearance that they would require. The triple wall would have a lower clearance as it would insulate the heat more and be less prone to burns.

For your chimney to draw well, you don't want your exhaust gases and smoke cooling too much before it reaches the termination or it will not continue to rise. The thickness of the pipe is actually to help insulate the gases from the cool outside air until it can escape from the termination.
